Ingredients

Main Ingredients:

  • Mapillai Samba Rice – ¾ cup
  • Button Mushrooms – 1 cup (sliced)
  • Onion – 1 small (chopped)
  • Garlic – 2 cloves (minced)
  • Parmesan – 2 tbsp (optional)

Liquids & Flavouring:

  • Vegetable Stock – 3 cups
  • Butter / Olive Oil – 1 tbsp
  • Thyme – 1 tsp
  • Salt & Pepper – to taste

Instructions for Mapillai Samba Mushroom Risotto:

Preparation:

  • Soak and parboil the rice to soften outer bran.
  • Prepare warm stock in a separate pan.

Cooking Process:

  • Sauté onion, garlic and mushrooms in butter.
  • Add rice and toast for a minute.
  • Add stock ladle by ladle, stirring continuously until creamy.
  • Finish with parmesan and herbs.

Serving Suggestions:

  • Plate with a swirl of truffle oil.
  • Garnish with microgreens or a poached egg.

Pro Tips:

  • Use starchy rice water if no stock is available.
  • Stir consistently to mimic risotto texture.
