Ingredients

Main Ingredients:

  • Mapillai Samba Rice – 1 cup (cooked and cooled)
  • Tamarind Pulp – ½ cup

Tempering:

  • Mustard Seeds – 1 tsp
  • Chana Dal – 1 tbsp
  • Urad Dal – 1 tbsp
  • Dried Red Chillies – 2
  • Curry Leaves – 6
  • Hing – a pinch
  • Groundnuts – 2 tbsp
  • Oil – 2 tbsp

Spices:

  • Turmeric – ½ tsp
  • Jaggery – 1 tsp
  • Salt – to taste

Instructions for Mapillai Samba Puliyodharai:

Preparation:

  • Cook rice until fluffy and cool completely.
  • Soak and extract tamarind pulp. Keep ready.

Cooking Process:

  • Heat oil, add tempering ingredients. Sauté until golden.
  • Add tamarind pulp, turmeric, jaggery and salt. Simmer until thick.
  • Mix this paste into the cooled rice. Toss gently.

Serving Suggestions:

  • Serve with appalam or curd.
  • Great for lunch boxes or travel meals.

Pro Tips:

  • Let the rice sit for 1 hour after mixing for best flavour.
  • Store the paste separately for future use.
