Ingredients

Main Ingredients:

  • Mapillai Samba Rice – ¾ cup
  • Cherry Tomatoes – ½ cup (halved)
  • Cucumber – ½ cup (diced)
  • Olives – ¼ cup
  • Feta – ¼ cup (crumbled)

Dressing:

  • Lemon Juice – 1 tbsp
  • Olive Oil – 1 tbsp
  • Dried Oregano – ½ tsp
  • Salt and Pepper – to taste

Preparation:

  • Soak and cook rice until al dente. Cool completely.
  • Chop all vegetables.
