- Karuppu Kavuni Rice – ¾ cup
- Chickpeas (boiled) – ½ cup
- Roasted Sweet Potato – ½ cup
- Blanched Broccoli – ½ cup

- Tahini – 1 tbsp

Instructions for Karuppu Kavuni Buddha Bowl:
Preparation:
- Soak Karuppu Kavuni rice for 6 hours, then cook in 2 cups water until soft but firm.
- Roast sweet potato cubes with olive oil and salt.
- Boil or steam broccoli until tender.
Cooking Process:
- Arrange cooked rice as the base of your bowl.
- Top with chickpeas, sweet potatoes, broccoli, and sliced avocado.
- Mix dressing ingredients and drizzle over the bowl just before serving.
