Ingredients

- Karuppu Kavuni Rice – 1 cup
- Mozzarella Cheese – 100g (cut into cubes)
- Onion – 1 small (finely chopped)
- Garlic – 2 cloves (minced)
- Italian Herbs – 1 tsp
- Maida (All-Purpose Flour) – ½ cup
- Breadcrumbs – 1 cup
- Water – as needed
- Salt – to taste
- Oil – for deep frying
Instructions for Karuppu Kavuni Arancini:
Preparation:
- Soak rice for 6–8 hours and cook until soft. Let it cool completely.
- In a pan, sauté onion and garlic in olive oil until golden. Mix into the rice with herbs and salt.
- Refrigerate rice mixture for at least 30 minutes for firm texture.
Cooking Process:
- Take a portion of rice, flatten it, place a cheese cube in the centre, and roll into a ball.
- Roll the balls in flour slurry, then coat with breadcrumbs.
- Deep fry in hot oil until golden and crispy.
Serving Suggestions:
- Serve hot with marinara or spiced tomato chutney.
- Garnish with fresh herbs or a squeeze of lime.
