Ingredients

Main Ingredients:

  • Karuppu Kavuni Rice – ¾ cup
  • Chickpeas (boiled) – ½ cup
  • Roasted Sweet Potato – ½ cup
  • Blanched Broccoli – ½ cup
  • Avocado – ½ sliced
  • Olive Oil – 2 tbsp
  • Lemon Juice – 1 tbsp
  • Tahini – 1 tbsp
  • Garlic (grated) – ½ tsp
  • Salt & Pepper – to taste

Instructions for Karuppu Kavuni Buddha Bowl:

Preparation:

  • Soak Karuppu Kavuni rice for 6 hours, then cook in 2 cups water until soft but firm.
  • Roast sweet potato cubes with olive oil and salt.
  • Boil or steam broccoli until tender.

Cooking Process:

  • Arrange cooked rice as the base of your bowl.
  • Top with chickpeas, sweet potatoes, broccoli, and sliced avocado.
  • Mix dressing ingredients and drizzle over the bowl just before serving.
